I usually add walnuts and dried fruit (like raisins, cranberries) to salad as well and sometimes hemp seeds. Just keep offering, making sure they get some air etc. Make a few of those smoothies that others have posted. Sounds like they are relatively active. Twins are normally smaller but these guys are at least average size, maybe taller. One is addicted to tv and would watch it too much if we let him, but DH is good about finding other things to do and making them turn off the tv. They go to school/day care which includes at least two recesses a day, with some field trips involving more time outdoors. They were in soccer for the first time last spring. They make a line of very expensive protein supplements for athletes, full of fruits, veggies, vitamins etc., but recently made this new one at half the cost for those who do not want all the extras. It is powdered fruits, veggies, and greens that you add to a fruit smoothie. I use blueberries, like another mom mentioned, to hide the green colour. The Vega line is put out by Brendan Brazier, the vegan Ironman athlete. He has two books out if you are interested and when sceptics worry about your kids diet you can point out that BB has been vegan since 16 and wins Ironman competitions all over the world:) Flax seed needs to be lightly ground, it doesn't need to be powder. I have an industrial blender that pulverizes it with the smoothie, most people just use a coffee grinder. With a normal home blender if you put it in first and pulse it you can get good results. Once you have it ground enough then add the other ingredients. Start with just a bit of flax and increase over time, it changes the texture you'll want your boys to get used to it. Ground flax is an egg substitute (I always use in pancakes) so once it is in the smoothie if you do not drink it within a short time the smoothie will thicken and your kids may not like the texture. This is also a good reason to put ice in the smoothie. For pancakes put 1 tbsp ground flax with 1.5 tbsp hot water, wait a few minutes and presto, egg. It goes into organic vs. non organic, irradiated foods, GMO, etc. It does contain sections on meat and dairy, but its overall focus is how to have a healthy diet and where to look/ shop in grocery stores. It is very informative and does support a balanced veggie diet for the most part. It is interesting to learn about all of the marketing that goes into trying to get us to buy what we buy, even at great stores like Whole Foods (which is now public and profit driven)..
