Jo. * Exported from MasterCook * Pasta con Pomodori Verdi (Spaghetti with Green Tomato Sauce) Recipe By :Diane Seed Serving Size : 0 Preparation Time :0:00 Categories : Herbs Pasta Printed Savoury Vegetables Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 c fresh herbs -- (43g) including as many of the following herbs as possible: mint, basil, arugula, chives, parsley, thyme, dill 5 very green tomatoes -- coarsely chopped 1 clove garlic -- chopped 2 tbsps Parmesan cheese -- (14g) freshly grated 14 ozs spaghetti -- (397g) 4 tbsps extra virgin olive oil -- (59ml) salt & pepper -- to taste In a blender or food processor, chop the herbs, tomatoes, and garlic. Add the cheese and briefly process. Cook the pasta in a large pot of salted boiling water until al dente. Just before draining the pasta, pour the oil into the blender or processor and make a smooth sauce. Add salt and black pepper to taste. Drain the pasta and stir in the sauce. Serve at once.
