Garlic Infused Green Beans

4 cups string beans

- or Chinese long beans

1 teaspoon toasted sesame oil

8 cloves minced garlic

1 red chili peppers -- seeded and minced

2 tablespoons seasoned rice vinegar

2 tablespoons tamari soy sauce

 

I first made this recipes using Chinese long beans, and everybody

loved it. Since then, I've made it with string beans with equally

tasty results. If you want to try the original version, look for long

beans in Asian markets.

 

Wash and trim the beans and break them into 1 1/2-inch pieces. Steam

over boiling water until just tender, about 7 minutes. Chill in ice

water, then drain and set aside.

 

Heat the oil in a nonstick skillet and saute the garlic and chili for

3 to 4minutes. Stir in the vinegar and tamari,along with the cooked

beans. Continue cooking, stirring constantly, until very hot, about 1

minute. Transfer to a serving dish. Ad don't forget to add a touch of

garnish.
