Cauliflower Okra Stew

Amount Measure Ingredient -- Preparation Method

1 1/2 cups cauliflower (1/2 head) -- chopped

12 okra -- (12 to 15) stemmed and sliced

1 yellow onion -- chopped

1/4 cup filtered water

1 tablespoon lite soy sauce

1 teaspoon minced garlic (about 3 cloves)

2 cups mushrooms -- quartered

1 cup celery (inner ribs) -- chopped

1 bell pepper -- diced

6 cups water

28 ounces pureed yellow tomatoes

1 teaspoon cumin

1 tablespoon dried mint flakes -- crumbled

1 cup cilantro leaves, whole

1/4 teaspoon cayenne

sea salt and pepper to taste

1 cup tomatoes -- chopped

 

Saute the cauliflower, okra, and onion in 1/4 cup water and soy sauce on low

heat.

 

Add the garlic, mushrooms, celery, and pepper after a couple of minutes.

 

Cover with water, stir in the tomato puree and spices. Cover the pot and simmer

about 20 minutes. Stir in tomatoes before serving.
