Red Cabbage, Carrot, And Raisin Slaw

5 cups red cabbage -- up to 6

shredded medium-thin

2 medium carrots -- coarsely grated

2/3 cup dark or golden raisins

1/2 cup soy mayonnaise

1/2 lemon -- Juice of

3 tablespoons light brown sugar or Sucanat -- to taste, up to 4

1/4 cup toasted sunflower seeds

 

6 to 8 servings

 

Like the previous slaw, this one provides a light and refreshing contrast

to pasta and noodle dishes that are assertively flavored It also adds a

lovely color to any meal.

 

Combine all the ingredients in a serving container, and toss well. Allow

to stand for 10 to 15 minutes for the flavors to blend, then serve.
