Guest guest Posted June 25, 2001 Report Share Posted June 25, 2001 * Exported from MasterCook * Steamed Vegetable Bundles Recipe By : The Sacred Kitchen, Robin and Jon Robertson, page 191 Serving Size : 4 Preparation Time :0:00 Categories : Side Dishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 carrots 2 parsnips 12 green beans -- trimmed 4 scallion greens or chives Chopped fresh herbs -- (optional) Salt and freshly ground pepper -- to taste Serves 4 These lovely bundles of colorful vegetables tied with ribbons of scallions make a beautiful adornment for the Thankful Holiday Roast platter, or a garnish for any other special-occasion dinner. Cut the carrots and parsnips into strips the same size as the green beans. Steam the vegetables separately over boiling water in a covered pot until just tender, about 2 to 3 minutes. Gather the vegetables into 4 bundles consisting of 3 or 4 of pieces each vegetable per bundle. Steam the scallion greens or chives for 1 minute. Tie each bundle with a steamed scallion or chive. Just before serving, reheat in a covered skillet with a small amount of water.
