Guest guest Posted July 2, 2001 Report Share Posted July 2, 2001 * Exported from MasterCook * TVP Vegetable Goulash Recipe By :Vegan Delights - Jeanne Marie Martin Serving Size : 12 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 medium potatoes -- cut in 1 " pieces 1 to 1 1/2 pounds carrots (7-8 medium) -- slices in 1/3 " -1/2 " chunks 6 to 10 Jerusalem artichokes (optional) 1 to 2 cups chopped broccoli or cauliflower 2 cups TVP 1 3/4 cups boiling water 1/2 to 1 pound mushrooms -- halved or quartered 3 to 4 medium onions -- chopped 8 to 10 stalks celery -- cut in 1 " pieces 2 to 3 green peppers -- cut in chunks or 2 small zucchini -- cut in chunks 1 to 2 cups fresh or frozen corn and/or peas 2 to 3 tablespoons tamari soy sauce 1 to 2 tablespoons vegetable broth powder 2 to 4 vegetable bouillon cubes 2 to 3 tablespoons parsley 1 1/2 teaspoons sea salt 1 teaspoon basil 1/2 teaspoon paprika 1/2 teaspoon sea kelp 1/8 teaspoon cayenne, to taste 1/8 teaspoon cumin powder (optional) 1/8 teaspoon thyme (optional) Serves 12 to 14. In a large pot, steam the hard vegetable (potatoes, carrots, artichokes, cauliflower, broccoli) for 10 to 15 minutes. While the vegetables are steaming, add the boiling water to the TVP and let it soak for 10 minutes until it expands and becomes tender. Next drain the steamed vegetables and return them to the pot without the steamer. Then add the TVP and all the remaining ingredients. Use as many mushrooms as you like. Simmer everything together on low to medium heat for 20 to 25 minutes until the flavors mingle. Correct the seasonings as desired. Serve hot with crusty bread. Keeps about 7 days refrigerated and freezes well. Hearty and nutritious!
