Guest guest Posted July 2, 2001 Report Share Posted July 2, 2001 to try - this is our kind of comfort food! * Exported from MasterCook * Stir Fried Broccoli and Tofu in Peanut Sauce (Quick) Recipe By :Main Course Vegetarian Pleasures by Jeanne Lemlin Serving Size : 4 Preparation Time :0:00 Categories : Main Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- PEANUT SAUCE: 1/4 cup natural-style peanut butter 3 tablespoons tamari soy sauce 3 tablespoons Chinese rice wine or sherry 2 tablespoons water 1 tablespoon toasted sesame oil STIR-FRY: 2 tablespoons vegetable oil 1 pound extra-firm tofu -- see directions 3 cloves garlic -- minced 1 teaspoon minced fresh ginger 1/4 teaspoon crushed red pepper flakes 5 cups roughly cut broccoli -- see directions 1/4 cup water steamed rice for accompaniment 1. Drain tofu; slice into 1/2-inch sheets; pat very dry; cut into 2 x 1/2-inch logs. Break a head of broccoli into small florets, peel stalks and slice (about 5 cups). 2. Combine the peanut butter, tamari and rice wine or sherry in a small bowl or large measuring cup and beat with a fork until smooth. Stir in the water and sesame oil, then set aside. 3. Heat 1 tbs oil in large skillet or wok over medium high heat until it is very hot but not smoking. Make sure the tofu is very dry, then drop it in the pan. Stir fry until golden all over about 10 minutes. Remove to a platter. 4. Add remaining oil to the pan. Stir in the garlic, ginger, crushed pepper. Cook 2 minutes, stirring constantly. Do not let the garlic brown. 5. Add broccoli, toss, then pour in the 1/4 cup water. Cover the pan and cook the brocoli about 5 minutes or until bright green and slightly crunchy. Remove the cover occasionally to toss the broccoli and to test it. 6. Return the tofu to the pan and toss. Pour on the peanut sauce and stir fry 1 minute. Serve on rice. Description: " Spicy.
