Guest guest Posted July 3, 2001 Report Share Posted July 3, 2001 * Exported from MasterCook * Crunchy Thai Noodle Salad Recipe By :Vegetarian Classics, Jeanne Lemlin Serving Size : 4 Preparation Time :0:00 Categories : Vegetarian Classics Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- THE DRESSING: 3 tablespoons Asian sesame oil 3 tablespoons canola oil 1/4 cup tamari soy sauce 3 tablespoons lime juice 2 tablespoons tomato paste 2 tablespoons honey 1 tablespoon minced fresh ginger 3 cloves garlic -- minced 1/2 teaspoon crushed red pepper flakes 1/2 teaspoon salt THE SALAD: 1 pound spaghetti or linguine 2 cups mung bean sprouts 1 cucumber -- peeled, seeded & cut into matchsticks 1 carrot -- peeled & grated 3 scallions -- very thinly sliced 2 tablespoons shredded fresh basil 2 tablespoons finely chopped fresh mint 2 tablespoons finely chopped cilantro 1/4 cup chopped dry roasted peanuts Bring a large stockpot of water to a boil for the noodles. In a medium bowl, whisk together all the ingredients for the dressing. Cook the noodles until al dente. Drain thoroughly in a colander and rinse the noodles under cold running water. Place the noodles in a very large serving bowl. Pour on the dressing and mix well. Mix in all the remaining ingredients except the peanuts. Let the noodles marinate at least 30 minutes before serving. Serve with the chopped peanuts sprinkled on top. TIP: The trio of basil, mint, and cilantro is key to giving this salad its Thai character, so be sure to include all these herbs.
