Guest guest Posted July 3, 2001 Report Share Posted July 3, 2001 * Exported from MasterCook * Tortellini With Broccoli, Walnuts and Olives (Quick) Recipe By :Main Course Vegetarian Pleasures by Jeanne Lemlin Serving Size : 4 Preparation Time :0:00 Categories : New Import Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup olive oil 6 garlic cloves -- minced 1/4 teaspoon crushed red pepper flakes 1/2 cup chopped walnuts 6 cups chopped broccoli -- see tip 1 pound frozen cheese tortellini 12 kalamata olives -- pitted and quartered 1/4 teaspoon salt 1/4 cup grated parmesan cheese 1. Bring a large pot of water to a boil. 2. To make the sauce, heat the oil in a large skillet over medium heat. Add the garlic, red pepper flakes, and walnuts. Saute, tossing often, for 5 minutes. 3. Stir in the broccoli with 1/2 cup of water. Cover the pan and cook until tender yet still bright green, about 5 minutes. 4. Drop the tortellini into the boiling water and cook until tender yet firm, about 5 minutes. Drain thoroughly in a colander. 5. Mix the tortellini into the broccoli sauce along with the olives, salt, and Parmesan cheese. Serve immediately. TIP - cut 1 large bunch broccoli into small florets.
