Marinated Barley Salad

Amount Measure Ingredient -- Preparation Method

1 cup pearl barley -- rinsed

2 tablespoons tamari soy sauce

2 tablespoons toasted sesame oil

1 tablespoon mirin wine vinegar

2 cloves garlic -- minced

1 tablespoon olive oil

1 red onion -- finely chopped

2 cups thinly sliced shiitake mushrooms

2 stalks celery -- diced

1/4 cup chopped fresh coriander (cilantro)

pinch salt and black pepper

 

1. In saucepan, bring 3 cups salted water to boil. Add barley and return to

boil. Reduce heat and simmer for 50 minutes until barley is tender. Drain and

place in large bowl.

 

2. In small bowl, whisk together tamari, sesame oil, mirin and garlic; pour half

over barley and toss. Set aside.

 

3. In large skillet, heat olive oil over medium high heat. Cook onion for 5

minutes or until softened. Add mushrooms and celery; cook for 5 minutes;

stirring often. Add to barley along with remaining dressing, coriander, salt and

pepper; toss well.

NOTES : Marinate the grains for at least 30 minutes. This salad's flavor

improves with time, so let it sit longer if possible.
