Guest guest Posted July 17, 2001 Report Share Posted July 17, 2001 * Exported from MasterCook Mac * Roasted Mushrooms with Pine Nuts Recipe By : Vegetarian Cooking for Everyone, Deborah Madison, p 389 Serving Size : 4 Preparation Time :0:00 Categories : Vegan Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound cremini or large white mushrooms -- sliced 1/3 " thick salt and freshly milled pepper 2 tablespoons olive oil -- to 3 3 tablespoons chopped parsley 2 cloves garlic 2 pinches red pepper flakes 3 tablespoons toasted pine nuts Roasting concentrates the earthy-woodsy flavor of mushrooms. Pine nuts are always good with mushrooms,, but especially when roasted. Preheat the oven to 400F. Put the mushrooms in a wide, shallow baking dish, season with salt and pepper, and toss with the oil. Bake until sizzling, about 25 minutes. Meanwhile, chop the parsley and garlic together. When the mushrooms are done, toss them with a parsley and pepper flakes.
