Guest guest Posted July 19, 2001 Report Share Posted July 19, 2001 * Exported from MasterCook * Broiled Zucchini Stuffed With Gruyere And Feta Recipe By : Vegetarian Cooking for Everyone, Deborah Madison, page 426 Serving Size : 4 Preparation Time :0:00 Categories : Side Dishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 medium zucchini (about 6 ounces each) 2 teaspoons butter Salt and freshly milled pepper 1/3 cup feta 1/4 cup cottage cheese or ricotta 1/4 cup grated Gruyere 1 egg 1 tablespoon chopped parsley 2 teaspoons chopped marjoram 1 teaspoon flour SERVES 4 This is quick, easy, and makes a nice presentation for a first course or light main dish. Preheat the broiler. Lightly oil a baking dish large enough to hold the squash in a single layer. Prepare the zucchini for stuffing, halving each one and scooping out the flesh. Finely chop the flesh and cook it in the butter in a skillet, stirring frequently, until browned in places. Season with salt and combine with the remaining ingredients. Fill the zucchini and set them side by side in the prepared baking dish.
