Broiled Zucchini Stuffed With Gruyere And Feta

4 medium zucchini

(about 6 ounces each)

2 teaspoons butter

Salt and freshly milled pepper

1/3 cup feta

1/4 cup cottage cheese or ricotta

1/4 cup grated Gruyere

1 egg

1 tablespoon chopped parsley

2 teaspoons chopped marjoram

1 teaspoon flour

 

SERVES 4

 

This is quick, easy, and makes a nice presentation for a first course or

light main dish.

 

Preheat the broiler. Lightly oil a baking dish large enough to hold the

squash in a single layer. Prepare the zucchini for stuffing, halving each

one and scooping out the flesh. Finely chop the flesh and cook it in the

butter in a skillet, stirring frequently, until browned in places. Season

with salt and combine with the remaining ingredients.

 

Fill the zucchini and set them side by side in the prepared baking

dish. Broil about 6 inches from the heat until the filling is browned and

heated through, about 20 minutes.
