Guest guest Posted July 22, 2001 Report Share Posted July 22, 2001 * Exported from MasterCook * Chocolate Fruit Purses Recipe By :Moosewood Collective Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup lightly packed fresh or frozen red raspberries or pitted sweet cherries 1 tablespoon sugar 1 tablespoon cornstarch 1/2 cup semisweet chocolate chips 1 sheet commercially prepared puff pastry -- defrosted* Preheat the oven to 400F. Lightly butter a baking sheet or large baking dish. Combine the fruit, sugar, and cornstarch in a small heavy saucepan. Cook on low heat, stirring often, until the mixture thickens, about 5 minutes. Remove from the heat and stir in the chocolate chips. On a lightly floured surface, unfold the defrosted puff pastry. Stretch it slightly to form a square, then cut it into quarters to form 4 squares. Mound 1/4 of the filling in the center of each square. Brush the edges with water, lift the four corners of each square up and over the filling, and twist them together to form a small topknot. Pinch each side seam together to seal the pastries. Place on the prepared baking sheet, leaving an inch or so of space between the pastries. Bake until puffed and golden, about 20 minutes. These pastries are best served warm. *Remove the puff pastry from your freezer before doing anything else; it takes at least 20 minutes to thaw. Using minimal ingredients to maximum effect, these little pastries require only five items often found in a well-stocked kitchen. The purses can be made with fresh fruit when it is available, but they are equally delicous filled with frozen fruit. Puff pastry and frozen fruit are available in the freezer section of most large supermarkets, and once you've tried this dessert, you'll want to have them on hand as staples in your freezer.
