Guest guest Posted July 23, 2001 Report Share Posted July 23, 2001 * Exported from MasterCook * Dark Chocolate Pudding with Bananas Recipe By :Moosewood Collective Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Banana Layer: 2 ripe bananas 1 tablespoon butter 1/2 teaspoon ground cinnamon 1 tablespoon sugar Pudding: 1/3 cup unsweetened cocoa powder 1/3 cup sugar 3 tablespoons cornstarch dash salt 2 cups milk* 1 teaspoon vanilla extract Peel the bananas and slice them lengthwise into halves. In a heavy skillet, melt the butter on medium heat. Cook the bananas for 3 to 4 minutes on each side, until golden and just beginning to brown. Transfer the bananas to a bowl and lightly mash them. Stir toogether the cinnamon and sugat, sprinkle over the bananas, and set aside. In a saucepan, combine the cocoa, sugar, cornstarch, and salt. On medium heat, gradually add the milk, stirring briskly until the cocoa has dissolved. Cook, stirring constantly, for about 10 minutes, until the pudding is boiling, thickened, and smooth. Remove from the heat and stir in the vanilla. To assemble individual servings, pour about 1/4 cup of the pudding into the bottom of each of 4 6-ounce dessert cups, spoon in 1/4 of the mashed bananas and cover evenly with the remaining pudding. To present the pudding in a 1-quart serving bowl, layer half of the pudding in the bottom of the bowl, evenly spread on all the bananas, and top with the rest of the pudding. Variation: For plain chocolate pudding, make this recipe without the cooked banana layer. For a quick variation, layer the pudding with sliced raw bananas (sprinkled with cinnamon and sugar, if you like). * When made with skim milk, a 7-ounce serving has only 239 calories and 4.8 grams of fat. In our experience, most children see the banana layer as an unexpected interruption of an otherwise perfectly fine chocolate treat, but adults see it as a welcome embellishment. Sauteing brings out the sweetness and full flavor of the bananas, which contrast beautifully with the bittersweet chocolate pudding. The chocolate, banana, and cinnamon make this a perfect finish for any African, Caribbean, or Brazilian meal. Nutr.
