Bulgur with Savory Greens

Amount Measure Ingredient -- Preparation Method

2 1/2 cups chopped onion

4 cloves garlic -- minced

1 tablespoon olive oil

1 pound swiss chard or escarole -- rinsed, chopped (8-cups)

2 tablespoons fresh lemon juice -- possibly more

1 1/2 cups bulgar

1 teaspoon salt

2 1/2 cups water

ground black pepper -- to taste

GARNISH:

lemon wedges

fresh mint

red wine vinegar or balsamic vinegar

 

1. In large skillet, saute onion and garlic in oil for 8 minutes, until the

onions are translucent. Add greens and lemon juice, cover and cook until greens

have just wilted.

 

2. Stir in bulgur and salt. Add water, cover and cook on medium low heat for 15

minutes, until the bulgur is tender and most of the water has been absorbed.

Sprinkle with peppe and add more lemon juice to taste.

 

3. Serve garnished with lemon wedges and mint. Offer a cruet of vinegar at the

table.
