Guest guest Posted July 28, 2001 Report Share Posted July 28, 2001 * Exported from MasterCook * Chinese Orzo Vegetable Salad Recipe By :Moosewood Collective Serving Size : 6 Preparation Time :0:00 Categories : 2Send Moosewood LF Fav Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups orzo 2 quarts boiling water 1 tablespoon dark sesame oil 2 cups sliced asparagus -- 1-inch diagonal 1 cup chopped red bell pepper 1 cup canned baby corn -- cut in half crosswise 1/2 cup chopped celery 3 scallions -- thinly sliced diagonal DRESSING: 3 tablespoons rice vinegar 3 tablespoons soy sauce 1 teaspoon Chinese chili paste 1 tablespoon grated fresh ginger root 2 cloves garlic -- minced salt and black pepper 1. Cook orzo in large bot of boiling water for 10 to 12 minutes, until al dente, stirring frequently. Drain the orzo, rinse with cold water, transfer to serving bowl. Toss with sesame oil and set aside. 2. Blanch asparagus in boiling water to cover for about 3 minutes, until just tender, then briefly submerge in cold water to help maintain their bright green color. Add bell pepper, corn, celery, scallions and asparagus to the orzo. 3. Whisk together all the dressing ingredients in a separate bowl and our it over the orzo and vegetables Gentle toss to coat evenly and serve.
