Herbed Potato Salad

Amount Measure Ingredient -- Preparation Method

4 medium red-skinned potatoes -- scrubbed and cooked

cooled and diced

2 medium celery stalks -- finely chopped

1 cup steamed fresh or thawed frozen green peas

1/2 cup minced green bell pepper

1/3 cup chopped black olives

2 tablespoons chopped fresh parsley

2 tablespoons minced fresh dill

1 scallion -- minced

2 tablespoons toasted sunflower seeds

1/3 cup Grainy Mustard Vinaigrette

(see separate recipe)

OR as needed to moisten

salt and freshly ground pepper -- to taste

 

6 servings

 

Serving potato salad is a great way to announce that summer has arrived!

 

Combine all the ingredients in a mixing bowl and toss together

thoroughly. Cover and refrigerate until needed. Pack into a tightly

lidded plastic container to transport.

Grainy Mustard Vinaigrette

Amount Measure Ingredient -- Preparation Method

1/3 cup canola oil

3 tablespoons olive oil

1/3 cup red or white wine vinegar

1/2 lemon -- Juice of

2 tablespoons grainy mustard -- to taste, up to 3

1 clove garlic -- crushed, optional

1/2 teaspoon dried dill

1/4 teaspoon dried tarragon

1/4 teaspoon savory

1/4 teaspoon basil

freshly ground black pepper -- to taste

 

Combine all the ingredients in a cruet and shake well. Shake well before

each use.
