Breaded Eggplant Cutlets

Amount Measure Ingredient -- Preparation Method

1 medium large globe eggplants -- (1 to 3) peeled

Breading:

1 cup whole wheat pastry flour

1/2 cup wheat germ or bran

1/2 cup corn meal

1/2 cup nutritional yeast

1 teaspoon herb seasoning

1 teaspoon sea salt

1 teaspoon garlic powder

1 teaspoon onion powder

Tahini Dressing (thick)

 

Serves 2 to 3. Steam eggplants until soft. Set aside to cool for a few

minutes. Slice eggplant.

 

In a bowl, mix together all of the breading ingredients.

 

Dip each piece of eggplant into the Tahini Dressing. Coat with the breading

mixture. Pan fry, on both sides, in an oiled skillet. Drain on paper towel.

 

Serve as is or in a sandwich.

Variation - cut tofu into chunks and prepare the same way. Serve a grain.

Tahini Dressing

1 cup water

1/2 cup tahini

3 teaspoons tamari or Bragg's

spices or herbs of choice (optional)

 

In a blender, blend all ingredients. Use 1/4 cup less water for a thicker

dressing to use in bakes and casseroles. Stays good for only two days in

refrigerator.

 

variation: 1 teaspoon curry powder may be added for a delicious curry-tahini

dressing.
