For Jamie: Couscous Salad with Grapes

Hi, Jamie

 

My husband and I are " veggie-cyclists " (we only run in the winter).

Here's a quick salad that only takes 5 minutes of cooking. It has

15g of protein per serving.

 

PatH posted a recipe just this last Monday for a Lentil Salad. I

tried it right away. It was easy to make and very filling, besides

tasting good.

Couscous Salad With Grapes

Amount Measure Ingredient -- Preparation Method

3 Green Onions -- sliced

1 Zucchini -- diced

1 Cup Whole Wheat Couscous -- cooked

16 Ounces Garbanzo Beans, Canned -- rinsed and drained

1 1/2 Cups Seedless Grapes -- halved

Dressing

1 Tablespoon Olive Oil

1 Tablespoon Lemon Juice

1 Teaspoon Cumin -- or more

1/2 Teaspoon Coriander -- ground

1 Teaspoon Salt -- or to taste

 

Cook couscous according to package directions.

 

While couscous is standing, slice the green onions, dice the zuchini.

Wisk together all the dressing ingredients.

 

Combine the couscous, onions and zuchini. Toss with dressing.

 

Serve at room temperature or cold.

This sounds really good! I make a similar salad with oranges instead of

grapes, and no zucchini.

 

For more protein, you could make this with quinoa instead of couscous.
