Guest guest Posted August 13, 2001 Report Share Posted August 13, 2001 * Exported from MasterCook * Rice and Swiss Chard Croquettes Recipe By :Veggie Life, Autumn 2001, Rosemary Furfaro Serving Size : 6 Preparation Time :0:00 Categories : Appetizers Main Dishes Rice Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 10 ounces frozen, chopped Swiss chard, thawed, excess water pressed out 2 cups cooked short-grain rice -- e.g. brown, sushi, pearl 1/2 cup diced cooked artichoke hearts (drain well if canned) 1/3 cup grated Parmesan cheese 1/4 cup diced roasted red bell pepper 2 large eggs 1/2 teaspoon salt 2 tablespoons water 1/2 cup to 3/4 cup dry breadcrumbs salt and pepper, to taste 2 tablespoons up to 4 tablespoons extra-virgin olive oil In a large mixing bowl, combine Swiss chard, rice, artichokes, Parmesan, bell pepper, 1 egg, and salt. Stir gently, but mix well. Moisten hands with water to prevent sticking, and pat mixture into 6 2-inch patties, using about 1/3 cup mixture for each. (If making appetizer croquettes, roll mixture into tablespoon-size balls.) In a small bowl, stir together remaining egg and water. In another small bowl, place breadcrumbs, salt, and pepper. Dip each croquette into egg wash, then into breadcrumbs, coating evenly. In a heavy-bottomed skillet over medium heat, saute patties in oil for 2 to 3 minutes per side, until crispy and golden.
