Noodle Kugel

1 pound wide egg noodles

2 cups nonfat cottage cheese

2 cups sour cream

4 eggs -- lightly beaten

1/2 cup sugar

1/2 cup golden raisins

1 cup grated tart apple

OR 1/2 cup diced apricot

***TOPPING***

1 cup fresh bread crumbs

1 teaspoon ground cinnamon

1 teaspoon coriander

1 teaspoon light brown sugar

6 tablespoons butter -- melted

 

SERVES 6 TO 8

 

Ann Katzen's kugel and its reputation among Santa Fe friends long preceded

our meeting. Slightly sweet, kugels re often served as if they were

savory, though you can certainly serve this as dessert. I like this one

with Chilled Apple or Quince Sauce and a simple watercress salad.

 

Butter a 3-quart baking dish and preheat the oven to 350F. Cook the

noodles in boiling salted water just until they're done, then drain and

rinse to stop the cooking. Combine the remaining ingredients in a bowl,

stir in the noodles, then turn them into the baking dish. Mix the topping

ingredients, then cover the surface with the topping and bake until the top

is browned, 45 to 55 minutes. Let it rest for 10 minutes, then turn onto a

platter and serve.
