Mixed Leaf Salad with Feta Cheese and Artichoke Dressing

Amount Measure Ingredient -- Preparation Method

9 ounces mixed spring greens

(curly endive, radicchio, lollo rosso, iceberg)

2 tablespoons finely chopped chives

4 ounces vegetarian feta cheese -- cubed

DRESSING:

4 ounces canned artichoke hearts -- drained

3 tablespoons sunflower oil

1 1/2 tablespoons fresh lemon juice

1/2 clove garlic -- crushed

1 teaspoon mild chili powder

1/2 cup carrot or mixed vegetable juice

sea salt

 

Place the lettuce leaves, chives and feta cheese in a bowl and mix. Blend the

dressing ingredients together in a liquidizer until smooth, chill and serve with

the salad.
