Guest guest Posted August 19, 2001 Report Share Posted August 19, 2001 * Exported from MasterCook * Lentil and Brazil Nut Roast Recipe By :Eating with the Seasons by Paula Bartimeus Serving Size : 6 Preparation Time :0:00 Categories : Winter Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 ounces black turtle beans -- soaked overnight 1 strip kombu or wakame (seaweed) -- rehydrated 7 ounces green lentils -- soaked overnight 1 onion -- peeled, chopped 4 ounces celery -- finely chopped 7 ounces carrots -- peeled, grated 3 tablespoons olive oil 2 teaspoons tamari soy sauce 1/2 teaspoon yeast extract 2 teaspoons dried sage 1 teaspoon dried thyme 4 tablespoons chopped fresh parsley 1 1/2 tablespoons tomato puree 1 tablespoon arrowroot 1. Drain and rinse black turtle beans and simmer in boiling water with the kombu (seaweed) for 1 hour. Remove soak water from lentils and simmer in boiling water for 25 minutes. When both are soft, drain and mash them together in a large basin. 2. Saute the onion, celery and carrot in the olive oil for 5 minutes, add the tamari and yeast extract and simmer for a few minutes until the vegetables are soft. Pour into the bean and lentil basin, add all remaining ingredients and mix so that everything is well blended. This can be done in a food mixer if available. 3. Place into an oiled 2 lb loaf tin, cover with foil and bake in a preheated oven at 350F for 2 hours. To crisp up the top, the foil can be removed in the final 10 minutes of cooking time. Arrowroot: A starch derived from a rhizomes of a tropical plant. It's a white, powdery thickener finer than flour, flavorless, more transparent than cornstarch. Substitute equal amounts for cornstarch. Maximum thickening is reached before boiling occurs.
