If anyone is interested in the cookbooks, you should be able to find them at a local SDA bookstore, online from: http://www.adventistbookcenter.com, OR some of the books may be sold on Amazon or Barnes & Noble's sites. Karen List Owner * Exported from MasterCook * Haystacks Recipe By :Adventist International Cookbook, Debby Shabo Wade Serving Size : 12 Preparation Time :0:00 Categories : Main Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 13-14 oz bag corn chips 1 50 oz can Worthington Chili OR 1 20 oz can Worthington Chili mixed with a 30 oz can of chili beans OR 1 recipe of Loida's Beans (pg 96) 1 head iceberg lettuce -- washed, cored, and finely chopped or shredded 6 large tomatoes -- washed & cut into pieces 2 pounds cheese -- shredded (about 1/2 cup per person) 2 large cans black olives -- drained & sliced 1 medium onion -- chopped 1 cup guacamole -- (appox) 1 cup salsa -- (approx) 1 cup sour cream -- (approx) Haystacks are a staple of Adventist potlucks and school cafeterias, but in case you don't know, here's how it works: Put a layer of chips on your plate. Add a layer of chili or beans. Then pile on the other ingredients in whatever order you prefer. Exchanges: 1 Grain(Starch); 1 Vegetable; 0 Fruit; 0 Non-Fat Milk; 3 1/2 Fat; 0 Other Carbohydrates. NOTES : The guacamole, salsa, and sour cream amounts listed are approximate. It is recommended you have plenty of each on hand. Author's Note: SInce everyone " builds " a Haystack differently, I did not want to venture nutritional analysis of this recipe. For less fat, go easy on the corn chips, canned chili, cheese, guacamole, olives, and sour cream (you can use a fat-free or low fat sour cream). Load up on the salad ingredients. Some people use rice and even cornbread to replace the corn chips, then stack all the other goodies on top. Nutr. Bookstores sell there, people sell there, cats and dogs sell there. I've saved a fortune shopping there first for books, records and tapes. The cool thing is that if there is a book you'd like, and they don't have it yet? You can set up a Wish List and they'll email you when someone lists it for sale! I even put some of my computer books up for sale. You know, those $60-80 ones? Believe it or not, I sold several programming ones right around the time the fall college semesters began. I was THRILLEd! It's not an auction, just those items for sale. I have no affiliation except that I always look there first and save a ton of money! Just a thought.
