Guest guest Posted August 27, 2001 Report Share Posted August 27, 2001 * Exported from MasterCook * Chocolate Covered Crispix Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2/3 C semi-sweet dairy-free chocolate chips 2 1/3 Tbsp peanut butter 1/3 C peanuts -- optional 4 C Kellogg's Crispix cereal (apparantly in the UK it's not vegan, but in the US it is) 2/3 C powdered sugar In a large microwave-safe bowl, melt chocolate on high for 1 minute, stir and heat for 30 seconds or until melted. (You can burn chocolate in the microwave.) Stir in peanut butter and peanuts. Gently stir in the cereal until well coated. Place the mixture into a large plastic storage container. Add the powdered sugar, put the lid on and gently turn the container around to coat the pieces. Store in the refrigerator. *No cows were harmed in the making of the Ghiradelli chips. They are made on dairy equipment and so have tiny amounts of residual dairy in them. They also contain sugar that may have been processed using bone char, but do not contain bone char. I don't make arbitrary distinctions since animal ingredients are used in everything, right down to the tires of the vegetable delivery truck. Tropical Source chips are far more politically correct, but also cost twice as much, and I can't afford them on a regular basis.
