Mock Turkey Loaf

1 20 oz can Worthington Vegetarian Burger

1 large onion -- finely diced

1/4 cup oil

1 cup saltine cracker crumbs

1 teaspoon poultry seasoning

3/4 cup 2% milk

3/4 teaspoon salt

1 8 oz package light cream cheese

3 eggs

OR 3/4 cup Morningstar Farms Scramblers

 

Mix all ingredients well and bake in an oiled 9x13-inch pan for 1 hour at 350ºF.

 

PER SERVING: 243 calories; 14g fat; 78mg cholesterol; 719mg sodium; 14g carbs;

16g protein

NOTES : Note from Ruth: I often substitute bulgur wheat for a half a can of the

burger. Add 1 cup of boiling water to 1/2 cup dry bulgur and gently cook 15

minutes. Turn off heat and let stand covered, for 15 minutes more, until

tender.
