Scalloped Potatoes and Tofu

Amount Measure Ingredient -- Preparation Method

1 tablespoon butter

2 tablespoons whole-wheat flour

1 1/3 cups 1% milk

1/2 teaspoon salt

freshly ground pepper -- to taste

1/4 teaspoon garlic powder

1/4 teaspoon caraway seeds

1/2 cup pitted sliced black olives

2 medium potatoes -- thinly sliced

1/4 pound firm tofu -- drained and thinly sliced

4 tablespoons shredded cheddar

4 tablespoons stuffing mix or breadcrumbs

 

1. Melt butter in medium saucepan.

 

2. Add the flour and stir until all the flour is moistened.

 

3. Add the milk and cook, stirring, over low heat, until the mixture thickens.

 

4. Add the seasonings, caraway seeds, and olives. Mix well and set aside.

 

5. In an oiled casserole dish, place half the potatoes topped with half the

tofu.

 

6. Cover with half the sauce.

 

7. Repeat.

 

8. Cover and bake in a 350-degree oven for 45 minutes.

 

9. Uncover and sprinkle with cheese and stuffing mix or breadcrumbs.

 

10. Return to oven and bake 15 minutes longer or until potatoes are tender.

 

TIP: If you don't use the entire package of tofu in a recipe, the remainder

keeps very well for up to a week if you put it in a container and cover with

cold water. Change the water every day until you use it all up.

NOTES : One among our favorites. We use firm tofu: it's easy to work with and is

readily available. If you don't have much experience preparing tofu, the

simplest recipe to start, and with which to win acceptance from family and

friends if they haven't already been introduced to tofu, is the Scalloped
