I thought I'd send it along because the article is interesting and the recipe sounds yummy! The cookbook sounds good too. Graham crackers are best known today as one of the first snack foods for toddlers and as the base of that humble campout favorite, s'mores. Yet this humble food had controversial beginnings and a vegetarian pedigree. The graham cracker was created by an eccentric Presbyterian minister, Sylvester Graham in the 1830's. Graham became interested in health and adopted a strict vegetarian diet. He railed against the consumption of alcohol, meat, white flour and other excesses. From his pulpit, he promoted what he thought was a healthier diet that included lots of fruits and vegetables, whole-grain breads (homemade, not from the local bakeries which tended to use white flour) and cereals. People scoffed at many of his " outlandish " ideas - including frequent bathing and brushing teeth. Graham developed his cracker - a combination of molasses and a coarsely ground whole wheat flour that was quickly baked to prevent it from going rancid - as a way to get more people, especially children, to eat whole wheat and, particularly, bran. There is still such a thing as " graham flour. " Basically, it is a coarser grind of whole wheat flour that retains much of the bran. It's ideal for baking. Perhaps a healthy pairing of graham crackers with tofu can make this creamy cheesecake seem less sinful. * Exported from MasterCook * Cappuccino Cinnamon Tofu Cheesecake Recipe By :Patricia Greenberg Serving Size : 12 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 Whole graham crackers or 1 1/4 cups lowfat graham cracker crumbs 6 tablespoons soft soy margarine 1 1/2 pounds soft tofu 1 cup sugar or light granulated cane juice 8 ounces soy cream cheese 1/2 cup expresso or strong coffee -- cooled 1 teaspoon ground cinnamon Process the graham crackers in a food processor on high speed until they are finely ground. Add the margarine and pulse until the mixture reaches the consistency of coarse crumbs. Pat the mixture into a thick layer in the bottom of a 9-inch springform pan or nonstick 9-inch pie pan. Set aside. Preheat oven to 350 degrees. In a blender or food processor, puree the tofu until smooth. Add the sugar, soy cram cheese, expresso and cinnamon and process until smooth. Pour the tofu mixture into the prepared crust and bake for 50 minutes. Turn off the oven, leaving the cake in the oven for 1 hour. Remove and cook. Refrigerate the cheesecake overnight and serve at room temperature. This should be remove and COOL. I also doubt that the nutritional info is correct because MC didn't " recognize " a number of the ingredients.
