Peanut Butter Pasta Spirals

Amount Measure Ingredient -- Preparation Method

12 oz. spiral pasta

2/3 cup smooth peanut butter

3/4 cup water or vegetable stock

3 T. soy sauce -- (3 to 4)

2 T. rice vinegar

2 scallions (green onions) -- sliced

1 T honey or rice syrup

1/2 teas. ground ginger

1/2 teas. chili powder

1 1/2 cup frozen green peas

Tabasco sauce

 

Begin cooking pasta.

 

Combine remaining ingredients, except for peas and Tabasco sauce, in food

processor and process until smooth.

 

When pasta is nearly done, add peas to the cooking water to thaw them. Drain and

transfer to serving bowl. Add peanut sauce and mix well. Serve with Tabasco on

the side.

 

This is good warm or cold. The sauce thickens while standing, so you may need to

add a bit more water or stock before serving if you don't serve it right away.
