Guest guest Posted September 7, 2001 Report Share Posted September 7, 2001 * Exported from MasterCook * Orzo Soup with Caramelized Onions and Cheese (Reisman) Recipe By :Sensationally Light Pasta nad Grains by Rose Reisman Serving Size : 6 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- vegetable cooking spray 2 teaspoons vegetable oil 2 large white onions -- thinly sliced 1 tablespoon packed brown sugar 2 teaspoons minced garlic 6 cups vegetable stock 3/4 teaspoon dried thyme leaves 2/3 cup orzo or other small pasta 1/2 cup shredded lowfat Swiss cheese or mozzarella cheese 1. In a saucepan sprayed with vegetable SPRAY, heat OIL over medium heat. Add ONIONS, BROWN SUGAR and GARLIC; reduce heat to medium low. Cook, stirring occasionally, for 30 minutes or until browned and tender. 2. Increase heat to medium high. Add STOCK and THYME; bring to a BOIL. Add ORZO; reduce heat to medium. Cook, covered for 10 minutes or until pasta is tender. 3. Ladle soup into bowls; sprinkle evenly with swiss CHEESE. Serve immediately. VARIATIONS: try using extra sweet onion varieties such as vidalia or Walla Walla. TIP: No matter what type of onions you use, be sure to stir occasionally to avoid burning.
