Guest guest Posted September 7, 2001 Report Share Posted September 7, 2001 * Exported from MasterCook * Linguine with Bok Choy and Snow Peas in Oyster Sauce Recipe By :Sensationally Light Pasta nad Grains by Rose Reisman Serving Size : 4 Preparation Time :0:00 Categories : Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- SAUCE: 2/3 cup vegetable stock 1/4 cup oyster sauce 1 tablespoon rice wine vinegar 1 tablespoon cornstarch 2 teaspoons sesame oil 2 teaspoons packed brown sugar 1 teaspoon hot Asian chili sauce (optional) -- or a few drops PASTA AND STIR-FRY: 8 ounces linguine (regular or whole-wheat) vegetable cooking spray 1 teaspoon vegetable oil 1 1/2 teaspoons minced garlic 1 teaspoon minced ginger root 3 cups thinly sliced bok choy 1 cup thinly sliced red bell peppers -- (strips) 1 cup shredded carrots 1 cup halved snow peas 1. In a bowl combine SAUCE ingredients and set aside. 2. In a large pot of boiling water, cook LINGUINE for 8 to 10 minutes or until tender but firm; drain. 3. Meanwhile, in a nonstick wok or large skillet sprayed with vegetable SPRAY, heat OIL over medium-high heat. Add GARLIC and GINGER; cook for 1 minute. Add BOK CHOY, RED PEPPERS, CARROTS and SNOW PEAS; cook for 4 minutes or until vegetables are tender-crisp. 4. Add sauce to the wok; cook for 1 minute or until thickened and bubbly. 5. In a serving bowl, combine sauce and pasta; toss well. Serve immediately. TIP - Bok Choy is also know as pak choy or Chinese white cabbage -- although it shouldn't be confused with Chinese cabbage, which is another name for napa cabbage. Bok choy is a delicious vegetable, mild with a nice crunch that makes it ideal for salads and stir fries. Baby bok choy is more delicate.
