Guest guest Posted September 26, 2001 Report Share Posted September 26, 2001 autumn salad for us to try!-) * Exported from MasterCook * Pear, Walnut And Feta Salad Recipe By :Versatile Vegetarian by Weight Watchers Serving Size : 4 Preparation Time :0:00 Categories : Versatile Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon orange juice 1 tablespoon rice vinegar -- or cider 2 teaspoons corn oil 1 teaspoon Dijon mustard Freshly ground black pepper -- to taste 1 bunch watercress -- cleaned 2 Belgian endives -- thinly sliced crosswise 2 Anjou or Bartlett pears -- cored and cut into 8-wedges each 1/3 cup crumbled feta cheese 1/4 cup walnuts -- chopped and toasted In a medium bowl, whisk the orange juice, vinegar, oil, mustard and pepper. Place the watercress and endives in a large bowl. Drizzle with half of the dressing; toss to coat. Add the pears to the medium bowl with the remaining dressing; toss to coat. Divide the greens among 4 plates. Arrange the pear slices over the greens in an attractive pattern, then sprinkle with the cheese and walnuts.
