Guest guest Posted September 26, 2001 Report Share Posted September 26, 2001 * Exported from MasterCook * Swiss Chard Ricotta Torta Recipe By :Versatile Vegetarian by Weight Watchers Serving Size : 4 Preparation Time :0:00 Categories : Versatile Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup plain dried bread crumbs 2 teaspoons olive oil 2 onions -- chopped 1 bunch Swiss chard -- cleaned and chopped 3 garlic cloves -- minced 1 cup part-skim ricotta cheese 2 eggs -- lightly beaten 1/2 teaspoon salt 1/4 teaspoon freshly ground black pepper Preheat the oven to 400oF. Spray a 9 " springform pan with nonstick cooking spray; sprinkle with 2 tablespoons of the bread crumbs. In a large nonstick skillet, heat the oil. Add the onions; cook, stirring as needed, until softened, about 5 minutes. Stir in the chard and garlic; cook, stirring as needed, until the chard is tender, about 5 minutes. Meanwhile, in a medium bowl, combine the ricotta, eggs, salt, pepper and the remaining 2 tablespoons of bread crumbs; stir in the chard mixture, then spoon into the pan. Bake until puffed, golden and firm to the touch, 45-50 minutes. Let stand 10 minutes before cutting into 4 wedges. SERVING PROVIDES: 2 Fruit/Vegetables, 1 Protein/Milk, 1 Fat.
