Guest guest Posted September 28, 2001 Report Share Posted September 28, 2001 portable salad * Exported from MasterCook * Spicy Tortellini Salad Recipe By :Cole's Home Library Mini-Menus Cookbooks: Healthy Eating Serving Size : 8 Preparation Time :0:00 Categories : Salad Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound tortellini -- (your choice of filling) 2 medium carrots 1 medium red bell pepper 1 medium green bell pepper 8 ounces sliced mushrooms 1/4 cup pitted black olives -- sliced PESTO DRESSING: 1/4 cup olive oil 1/4 cup white vinegar 2 garlic cloves -- crushed 1/4 cup chopped fresh basil 3 tablespoons grated parmesan cheese 1 1/2 tablespoons tomato paste Add tortellini to large pan of boiling water; boil, uncovered, until just tender. Drain. Rinse under cold water; drain. Cut carrots and bell peppers into thin strips. Combine tortellini, uncooked vegetables and olives in bowl. Top with dressing. PESTO DRESSING: Combine all ingredients in bowl; mix well.
