Guest guest Posted October 1, 2001 Report Share Posted October 1, 2001 Apple Dessert Omelette Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 eggs -- separated 1 tablespoon flour 1/2 teaspoon nutmeg 1 tablespoon water 1/2 teaspoon vanilla 1/3 cup granulated sugar 2 tablespoons butter 2 baking apples -- peeled, cored and sliced 4 tablespoons butter 1/4 cup brown sugar 1/2 teaspoon ginger C & H powdered sugar Preheat oven to 350 degrees F. In small bowl, combine egg yolks, flour, nutmeg, water and vanilla; beat well. In medium bowl, beat egg whites until foamy; gradually add sugar and continue beating until stiff but not dry. Fold egg yolk mixture into whites. Melt 2 tablespoons butter in an 8 inch oven proof omelette pan or skillet. Pour in egg mixture and spread evenly. Cook over low heat about 4 minutes or omelette is barely browned. Bake at 350 degrees F oven for 10 to 15 minutes or until puffy and golden brown. Meanwhile, melt 4 tablespoons butter in skillet; add apples and saute about 4 minutes. Add brown sugar and continue over low heat until apples are tender and glazed. Top omelette with glazed apples and sift powdered sugar over top before serving. To serve, cut into wedges; serve immediately. Makes 4 servings HINTS: To save time, beat egg whites first and use the same beaters on mixer to beat yolks. The apples may be prepared up to an hour before serving. The omelette must be prepared and baked just before serving. For casual dining, serve dessert in skillet.
