David & Rachelle Bronfman Serving Size : 1 Preparation Time :0:00 Categories : Tofu Vegan Dips & Spreads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups packed finely chopped kale 1 cup tofu mayonnaise 8 ounces regular or soft tofu 2 tablespoons lemon juice 3 green onions -- chopped 1 package onion soup mix 3 tablespoons finely chopped dill 1 small round loaf of crusty bread Makes 2/3 cup. Spinach dip is great to serve at parties. In this recipe, we use kale instead of spinach since kale is much richer in absorbable calcium. The tofu provides a creamy texture and the end result is a delicious and familiar dip that everyone can enjoy. Tip: If you prefer, refrigerate dip for 1 hour before adding to hollowed-out bread. Steam or boil kale until wilted; let cool. With our hands, squeeze out excess liquid. Set aside. In a food processor, combine mayonnaise, tofu, lemon juice, green onions, and soup mix; blend until creamy. Add kale; process on and off for a few seconds until well mied but without liquefying the kale. Transfer to a medium-sized bowl. Add dill and mix together. With a sharp knife, cut a round hole in the top of the crusty bread loaf. Hollow out inside by tearing out pieces of bread and setting them aside.
