I found it a bit mild but it was still quite good. * Exported from MasterCook * Pasta with Spicy Vodka Sauce Recipe By : RisaG Serving Size : 4 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tbsp olive oil 1 tbsp unsalted butter 1/2 cup onion -- chopped 2 cloves garlic -- minced** 2 14 oz cans Fresh Cut diced tomatoes -- drained 1 tsp dried basil 1 cayenne chile -- chopped 1/2 cup vodka 1/3 cup half and half 3 tbsp freshly grated parmesan cheese 1 lb thin spaghetti or linguine freshly ground black pepper fresh basil -- chopped Preheat skillet over medium-high heat. Add olive oil and butter. Let butter melt and then add onions. Cook until tender, about 5 minutes. Add garilc and saute for another minute. Add tomatoes, dried basil, cayenne chile, vodka. Cook until sauce has reduced, about 15 minutes. Add half-and-half and simmer until thickened, about another 5 minutes. Add the parmesan cheese and blend well. Meanwhile, cook pasta according to package directions. Place some of the sauce on the bottom of a large pasta serving bowl (largest bowl you have). Place cooked pasta on top. Then add more of the sauce. Garnish with fresh basil and parmesan cheese. Guest guest Posted October 7, 2001 Report Share Posted October 7, 2001 Hi Risa- Hi all, my two cents- whenever i make any cream sauce, I replace the cream/milk with silken tofu or lite silken tofu and soy milk sometimes to thin it if necessary- it's a good way to take out saturated fat and add good soy protein.. I'm not vegan, but I definately do that- just a tip for anyone who may make this stuff often Looks like a good recipe Risa, I'll try it !!
