Tonight's Dinner - Pasta with Spicy Vodka Sauce

This was tonight's dinner. It was quite good and easy to put together. If

you want it spicier, use 2 chiles. I found it a bit mild but it was still

quite good.

Pasta with Spicy Vodka Sauce

Amount Measure Ingredient -- Preparation Method

2 tbsp olive oil

1 tbsp unsalted butter

1/2 cup onion -- chopped

2 cloves garlic -- minced**

2 14 oz cans Fresh Cut diced tomatoes -- drained

1 tsp dried basil

1 cayenne chile -- chopped

1/2 cup vodka

1/3 cup half and half

3 tbsp freshly grated parmesan cheese

1 lb thin spaghetti or linguine

freshly ground black pepper

fresh basil -- chopped

 

Preheat skillet over medium-high heat. Add olive oil and butter. Let butter

melt and then add onions. Cook until tender, about 5 minutes. Add garilc and

saute for another minute. Add tomatoes, dried basil, cayenne chile, vodka.

Cook until sauce has reduced, about 15 minutes. Add half-and-half and simmer

until thickened, about another 5 minutes. Add the parmesan cheese and blend

well.

 

Meanwhile, cook pasta according to package directions. Place some of the

sauce on the bottom of a large pasta serving bowl (largest bowl you have).

Place cooked pasta on top. Then add more of the sauce. Garnish with fresh

basil and parmesan cheese.

 

Serve with warm bread or rolls.

Hi Risa- Hi all,

 

my two cents- whenever i make any cream sauce, I replace the cream/milk with

silken tofu or lite silken tofu and soy milk sometimes to thin it if

necessary- it's a good way to take out saturated fat and add good soy

protein.. :)

I'm not vegan, but I definately do that- just a tip for anyone who may make

this stuff often :)
