French Onion Soup

4 cups onions -- up to 5

thinly sliced on a diagonal

4 shiitake mushrooms -- soaked, (4 to 5)

stems removed -- and sliced

5 cups water

2 slices whole wheat sourdough bread

sliced into 1-inch cubes

1/4 cup chopped scallions or chives or parsley

dark sesame oil

tamari

 

Heat a small amount of dark sesame oil in a pot. Saute onions 3-4 minutes,

until onions are translucent. Add sliced shiitake mushrooms and saute for

another 1-2 minutes.

 

Add water and bring to a boil. Cover pot and reduce flame to medium-low;

simmer for 30 minutes or until onions are very soft. Season with a small

amount of tamari for a mild-tasting soup.

 

Heat 1 inch of sesame oil in a skillet. When oil is hot, add bread cubes

and deep-fry until golden brown. Remove and drain on clean paper towels.

 

Place soup in individual serving bowls and garnish each serving with

several deep-filed bread cubes and some chopped scallions, chives, or

parsley. A few strips of toasted nod may be used in addition. Instead of

bread cubes, you may use 1-inch squares of baked toasted, or deep-fried

mochi for garnish.
