Guest guest Posted October 8, 2001 Report Share Posted October 8, 2001 I did not find a book by Kushi. I did find a book called " Zen Macrobiotic Cooking " that appeared to have recipes I might make. So I got that instead. But now that I'm reading and copying, I'm skeptical. The quality is uneven. Some recipes don't look like they will work. There is a chapati that uses half flour and half cornstarch. Half? That's new to me. Is that the " macro " part of it? No say. The instructions are uneven and at times, pedantic: a recipe for fried rice goes on and on about how we " should not be afraid " to precook carrots separately from the other vegetables but in the same recipe assumes we know we should add oil to the " Chinese pan " -- oil is never mentioned. very uneven. In this recipe, miso is heated.... I don't recommend this book. It's more a book of ideas. The author assumes we will read the cookbook from cover to cover -- that way we will know that fried rice needs oil and that's why it wasn't mentioned in sub- sequent recipes. so, ok! I vented ;-} Or over-reacted. Enough already! Some water should remain. Puree in blender. The puree should be thick. Add the miso, nutmeg, parsley and salt. Cook without covering for 15 minutes over a low flame. Serve warm or cool. This spread keeps in the refrigerator for a few days. Salt to taste. Add water until dough rolls off the sides of the bowl and is not sticking to your fingers. Flatten dough in your hands and place in an oiled pan. Cook 10 minutes for each side over a medium flame. VARIATION - try buckwheat and unbleached white flour. Make the chapati very thin. EDITOR'S NOTE: Did the author mean to stay " cornmeal " instead of " corn flour? " I don't believe so: he uses both terms quite distinctly. I did not test this recipe because the flour-cornstarch mixture is new to me. Usually we start with 2 measures flour; add up to 1 tsp salt. Then add one measure of water, plus more if needed to make a thin batter. Let the batter rest in the refrigerator for 1 hour. -PatH Briefly, Zen Macrobiotic cooking is the ancient Zen art of selecting and preparing food to prolong life.
