Whole Grain And Vegetable Patties

Recipe By : The Macrobiotic Way, by Michio Kushi, page 152

Serving Size : 1 Preparation Time :0:00

Categories : Grains And Cereals Main Dishes, Vegetarian

Vegetables

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

4 cups pressure-cooked or boiled millet

1 cup onions -- diced

1/2 cup carrots -- diced

1/4 cup celery -- diced

1/2 cup cooked seitan -- diced

(see separate recipe)

1 cup water

tamari

whole wheat pastry flour -- (optional)

OR whole wheat flour

dark sesame oil

In a bowl, mix millet and vegetables thoroughly. Mix in seitan. Add water

and a small amount of tamari and mix again. Grain should be moist enough

so that you will be able to make patties; if necessary, add a little more

water. If grain is too moist, add a little whole wheat pastry flour until

you obtain the right consistency.

Take 1 handful of grain and vegetable mixture and shape into a

patty. Repeat until all grain is gone.

Heat a moderate amount of sesame oil in a skillet. Place several patties

in skillet, cover, and reduce flame to medium-low. Cook until golden

brown. Turn patties over and cook until golden brown. Remove and place on

a serving platter. Garnish with sprigs of fresh parsley.
