Unleavened Apple Muffins

Amount Measure Ingredient -- Preparation Method

2 cups whole wheat pastry flour

1 cup whole wheat bread flour

1/4 teaspoon sea salt

1/4 teaspoon cinnamon

3 tablespoons corn oil -- to 4

1 3/4 cups apple juice

3 apples -- peeled and diced

 

Combine all dry ingredients in a mixing bowl. Add the oil and mix

thoroughly. Next, mix in the apple juice. Add the apples to the

batter and mix evenly. Preheat the oven to 350F. Fill lightly oiled

muffin cups to the top with batter. Bake 25-30 minutes or until

golden brown.

 

For a lighter muffin, place the batter in a glass bowl, cover with a

damp towel, and let sit in a warm place overnight. Then fill the

muffin cups about 3/4 full and bake he same as above.
