Macrobiotics: Daikon, Daikon Greens, and Kombu

Have you ever used daikon greens? I love sliced daikon sprinkled with

soy sauce. When the daikon is fresh, the greens are still attached

and they are delicious.

Daikon, Daikon Greens, and Kombu

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 strip kombu -- 4-6 inches long

-soaked and cut in 1-inch squares

1 cup water -- for soaking

1 piece daikon -- 6-8 inches long

- sliced into 1/4-1/2 inch thick rounds -- 2 cups

1/2 cup water

1 pinch sea salt

1/2 bunch daikon greens -- 1 cup

- sliced into 1-inch lengths

1 1/2 teaspoons tamari soy sauce

 

Soak the kombu for 3-5 minutes. Place the squares on the bottom of

the pot. Place the daikon on top. Place the water, including the

soaking water, and the salt in the pot. Cover, bring to a boil, and

reduce the flame to medium-low. Simmer for 30-35 minutes.

 

Place the daikon greens on top of the daikon. Then add tamari ,

cover, and cook for another 4-5 minutes. Mix the ingredients and

serve.
