Guest guest Posted October 13, 2001 Report Share Posted October 13, 2001 * Exported from MasterCook * Miso-Squash Soup Recipe By : The Macrobiotic Way, by Michio Kushi, page 182 Serving Size : 1 Preparation Time :0:00 Categories : Soups And Stews Soyfoods Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 5 cups water 1 cup onions cut into half-moons 2 cups acorn squash cut into 1-inch chunks 1/2 cup wakame -- washed soaked -- and sliced 4 teaspoons puréed barley miso -- (mugi), up to 5 (adjust to taste) 1/4 cup chopped scallions Place water in a pot and bring to a boil. Add onions and squash. Cover pot and reduce flame to medium-low. Simmer for several minutes, until squash is tender. Add wakame and simmer for 2-3 minutes. Reduce flame to very low and add puréed miso for a mild taste.
