Yuba - Vegetarian Chicken

This is one of two recipes I'm posting for bean curd skin (yuba). I'm afraid

the nutritional information is inaccurate because I couldn't figure out how to

compute the nutrients in the yuba. Since it's basically dehydrated soy milk I

would guess it takes 1/4 - 1/2 cup soy milk per sheet, but that's only a guess.

Vegetarian Chicken

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

20 bean curd sheets -- (pai yei), cut into 3/4 " x 3/4 "

(2cm x 2cm) squares

oil for deep-frying -- (to 350 f)

STEWING SAUCE:

2 cups water

1 tablespoon thick soy sauce

1 tablespoon ketchup

1 teaspoon pepper

1 teaspoon sugar

1 teaspoon m.s.g.

4 flowerets star anise

3 slices ginger

 

Cook bean curd sheets for 5 minutes in 4 cups water with 1 tsp. baking soda;

drain. Cook again for 5 minutes in 3 cups water with 1 Tb. salt; drain.

 

While still hot wrap in cloth to form a 4 " x 2 1/2 " x 1/2 " (10 x 6 x 2 cm)

rectangle block and place a weight on top to squeeze out the excess water for 2

hours.

 

Remove cloth and deep-fry the pressed bean curd sheets 'til golden. Drain well.

 

Cook 10 minutes in stewing sauce. Cool, slice, serve.
