Spinach Lasagna Without Tomato Sauce

Amount Measure Ingredient -- Preparation Method

1 onion -- peeled and minced

1 clove garlic -- peeled and minced

1 Tb olive oil

3 cups cottage cheese (vegan or dairy)

2 cups Pureed Bell Pepper Sauce

1 bunch spinach -- steamed until

tender, chopped

Lasagna sheets (no-bake type or cooked

regular type)

Mozzarella cheese (soy or dairy)

 

Saute` onion and garlic in oil until golden.

Add cottage cheese, pureed peppers, and spinach, and cook gently for 1 - 2

minutes.

Layer mixture with lasagna sheets in a greased baking dish

(begin with some sauce, and end with some sauce).

Top with mozzarella cheese.

Bake in a moderate oven for about 30 minutes, or until heated through.

 

NOTE:

For Tomato Version, use spaghetti sauce.

Pureed Bell Pepper Sauce

4 red bell peppers -- seeded and chopped

1 tsp oil

2 cups vegetable broth or water

 

Saute` peppers in oil until soft.

Add broth or water.

Simmer 20 minutes.

Puree in blender.
