Pasta and Vegetable Mornay

Amount Measure Ingredient -- Preparation Method

2 tablespoons butter

1 small onion -- chopped

3 tablespoons all-purpose flour

1 cup milk

1/4 cup dry white wine

1/2 cup cream

2 cups cooked bite-sized pasta

(elbow macaroni, egg noodle etc.)

1 cup grated cheddar cheese

1/3 cup grated parmesan cheese

1 medium carrot -- grated

1 medium zucchini -- grated

2 hard-boiled eggs -- finely chopped

1 1/2 tablespoons chopped fresh parsley

1/2 teaspoon celery salt

3/4 cup fresh bread crumbs

 

1. Melt butter in small pan, add onion, cook, stirring, until soft. Stir in

flour, stir until mixture is dry and grainy. Remove from heat, gradually stir in

combined milk and wine, stir over heat until sauce boils and thickens.

 

2. Transfer to large bowl, stir in cream, pasta, cheeses, carrot, zucchini,

eggs, parsley, and salt; mix well.

 

3. Spoon mixture into 6-cup ovenproof dish, sprinkle with breadcrumbs.

 

4. Bake uncovered at 350F for 30 minutes or until browned lightly.

 

Recipe best when made on day of serving. Does not freeze well. Can be

microwaved.
