Guest guest Posted November 8, 2001 Report Share Posted November 8, 2001 * Exported from MasterCook * Buckwheat Soup Recipe By : Complete Guide to Macrobiotic Cooking, Kushi & Jack, p. 146 Serving Size : 1 Preparation Time :0:00 Categories : None Grains And Cereals Soups And Stews Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Sesame oil 1 onion -- peeled and diced 1/2 cup buckwheat -- dry-roasted 5 cups spring water -- up to 6 1 pinch sea salt Tamari soy sauce -- to taste 1/2 cup minced parsley -- for garnish Brush a small amount of dark sesame oil over the bottom of a pot. Saute the onion until it is translucent. Add the buckwheat, water, and salt. Bring to a boil, cover, lower the heat, and simmer for 25 to 30 minutes. Season with tamari soy sauce and simmer 10 minutes longer. Garnish with minced parsley and serve. Variation: For a richer, more dynamic soup, add carrots, cabbage, or a variety of other vegetables.
