Crybabies

 

Recipe By :Rebecca Wood, Veggie Life, Winter 2001-2002

Amount Measure Ingredient -- Preparation Method

1/2 cup unsalted butter, softened

1/2 cup Rapadura or other organic sugar

1/2 cup barley malt syrup

1/2 cup brewed coffee or coffee substitute, cooled

3/4 cup rye flour

3/4 cup whole-wheat pastry flour or unbleached

white flour

1 teaspoon baking soda

1 teaspoon cinnamon

1/4 teaspoon sea salt

1/4 teaspoon ground ginger

1/2 cup raisins

1/2 cup chopped walnuts

Cooking spray or oil

 

In a food processor or using a stick blender, cream butter and sugar until light

and fluffy. Mix in malt syrup and coffee. In a medium mixing bowl, combine

flours, baking soda, cinnamon, salt, and ginger. Add flour mixture to sugar

mixture, mixing just until combine. Transfer to the mixing bowl and stir in

raisins and nuts.

 

Smooth top of dough, cover tightly and refrigerate for 30 minutes, or until

chilled. (May be refrigerated for up to 5 days.)

 

Preheat oven to 350 degrees and lightly spray or oil 2 baking sheets. Drop

heaping teaspoonsful of dough onto baking sheets, 1 to 2 inches apart. Bake

cookies for 10 to 12 minutes, until lightly browned. Cool on a wire rack.

Layer cookies in an airtight container between sheets of wax paper, and store at

room temperature for up to 10 days.

I read the intro to the recipe in Rebecca's book and it doesn't jive with my

memory. My grandmother told me that gingerbread cookies were great teething

cookies. when the baby cries. But searching on the web, I'm not find that

image. Just the one of " crying for more. "

 

here's the intro from the book if you want to tack it on as a note to the recipe
