Onion Bisque

Amount Measure Ingredient -- Preparation Method

4 medium leeks

2 tablespoons olive oil

3 tablespoons butter

5 shallots -- minced

4 medium onions -- coarsely diced

4 teaspoons minced garlic

4 baking potatoes -- peeled

and cut into 1/2-inch cubes

2 teaspoons salt

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon dried marjoram

2 bay leaves

6 cups Vegetable Broth

(see separate recipe)

pepper to taste -- optional

 

Servings: 6

 

A good accompaniment for this dish would be Confetti Rice and Vegetables,

(see separate recipe), some hearty bread and a tossed green salad. Minced

chives make a good garnish.

 

Cut tough top leaves from leeks about 2 inches above slit. Cut leeks in

half lengthwise and thoroughly wash out dirt between leaves. Cut into

1/4-inch pieces. In a large skillet on medium-high heat, heat oil and

butter and saute leeks, shallots and onions for 5 to 6 minutes, until

soft. Add garlic and sauté for 1 minute. Pour into the slow cooker. Add

potatoes, salt, basil, oregano, marjoram, bay leaves and vegetable

broth. Cover and cook on low heat for 8 hours. Taste, adjust seasonings

and add pepper if desired.
